ROAST CHICKEN WITH PISTACHIO AND CRANBERRY STUFFING RECIPE:

To cook this delicious dish, first you have to make stuffing. For that ,heat the oil in a large non-stick frying pan. Add onion, pistachio, raisins, garlic and then cook for 8-10 minutes or until the onion softens. Then leave it for five minutes to cook slightly. Place the pistachio mixture in a bowl and add breadcrumbs, egg, parsley and stir to combine. Add salt and pepper. Now preheat oven to 190°C and rinse chicken cavities under cold running water. Now spoon the pistachio mixture among chicken cavities and close cavity openings with toothpicks. Tie the legs together with white kitchen string. Place the chicken in a pan and brush with oil. Roast for 1 hour and 15 minutes. Cover with foil and set aside for 10 minutes. Now serve it with pistachio stuffing and parsley.

Deep fry the onion in hot oil until golden. Remove from oil and place it on absorbent papers and crush it. Then mix all spices, mustard oil, ginger, crushed fried onion, garlic, yogurt and raw papaya. Apply on the meat and leave it for 3-4 hours. Now grill the meat on low heat until the kebabs are brown on all sides. Serve it with onion rings, chopped green chilies, raita and parathas.
